Ingredients:

2 large zucchinis

2 beaten eggs

1/2 cup chopped green onions

1 cup all-purpose flour

1/2 tsp black pepper

1/2 tsp salt

1 tsp baking powder

How to make zucchini fritters: Method

1. Take two large zucchinis, cut both sides ends.

2. Grate the zucchinis with a grater on the large holes side.

3. Put all grated zucchinis in a large bowl, add one tablespoon of salt, and keep it aside for 10 minutes so that zucchini will extract excess water from it.

4. Squeeze the zucchinis with hand or cheesecloth and press it to remove all the water from it. 

5. Put this dry grated zucchini indifferent bowl. 

6. Add 2 beaten eggs, chopped green onions, flour, black pepper, salt, and baking powder. Mix this well with grated zucchini.

7. Place a frying pan on medium-high heat and add 2 tablespoons of oil.

8. Once the oil is hot, add zucchini fritters mixture with the help of a tablespoon. Make it a little flat from the top.

9. Fry on each side about four minutes until golden brown. Add more oil from the sides if needed.

10. Your Zucchini fritters are ready. You can serve them with sour cream or just plain cream.


Advice:

  • You can make potato fritters or your favourite vegetables.
  • You can also serve these fritters with Chipotle Mayo.
